From 21st March - 27th April Manta welcomes Chef Ntinos Fotinakis from renowned Athens’ restaurant Bungalow 7 for an exclusive Greek culinary takeover, bring the spirit of a Greek summer to Sydney. Get ready to experience the generosity and warmth of true Greek dining, with a menu design to transport you to a lively seaside taverna. 

Guests will experience a menu that stays true to the authenticity of Greek cuisine while incorporating local influences–classic grilling techniques, slow-braised dishes, and citrus-froward flavours–elevated by premium Australian seafood and fresh seasonal produce.

Meet Chef Ntinos Fotinakis–Head Chef of Bungalow 7, Athens

Known for his warm hospitality, Chef Ntinos blends modern Greek cuisine with tradition. His philosophy is rooted in philoxenia–the Greek art of hospitality–making every guest feel like family. 

Inspired by childhood Sundays at his grandmother’s table, he honed his craft alongside top chefs, refining ingredient-driven techniques to elevate Greek flavours.

Now, he brings his approach to Manta, where quality seafood, olive oil, citrus, and fragrant herbs perfectly complement its coastal dining philosophy.
