This passion doesn’t end in the kitchen. Manta’s wine cellar is a product of immense effort and pride. Together with Executive Chef Daniel Hughes, we work to bring our diners a perfect marriage of outstanding produce and the best of local and international wines. Our team is always on hand to ensure that each diner enjoys the extraordinary synergy of location, food and wine on offer at Manta.

James Green | Executive Chef

It’s an absolute pleasure to work with some of the best produce the country has to offer in the Manta and MOLO menus.”

James brings with him a wealth of knowledge and experience, having worked in the kitchens of acclaimed restaurants across the USA and Canada. As well as more recently working for Matt Moran at the famous North Bondi Fish.
